Makes 1 Pizza
Ingredients:
- 1 lavash flatbread
- 2 tbsp. of mascarpone cheese, room temperature
- 1/3 cup of aged cheddar cheese, grated
- 2 red onion, sliced thin and sauté in olive oil, few springs of thyme, pepper flakes, and a splash of Cuyama Orchard raw apple cider vinegar and seasoned to taste until well caramelized (1.5 to 2 hours)
- 1 Pink Lady apple, sliced thin
- Pinch of thyme, minced
- Kosher salt and freshly ground black pepper to taste
Method:
- Preheat the oven to 425 degrees.
- On a heavy-duty sheet pan covered with parchment, place the flatbread. Using a spoon, spread a layer of mascarpone to the edges. Spread the grated cheese, add small dollops of the red onions, layer the sliced apples, sprinkle the minced thyme, and season to taste.
- Bake in the oven for 8-10 minutes or until you have golden brown edges.
- Remove from the oven, and allow it to cool.
