Roasted them at 425 for 25 to 30 minutes so that the inner skin easily peeled off
My husband and I are huge fans of Frog Hollow Farm and have been long time customers ever since we first ate their glorious fruit over 25 years ago. Unfortunately, the California Chestnuts we just purchased were far too variable in quality for both the price point and to be worthy of the Frog Hollow name. About 30% were moist, sweet and delicious (i.e. Frog Hollow-worthy!), 40% were more starchy and flavorless than they should be if they were truly fresh (i.e. "acceptable, not great"), 20% were dried out and so hard that you couldn't bite into them (i.e. OLD) and the last 10% were outright bad (moldy, rotten, etc.).
The good news is that when we called to let the folks at Frog Hollow know, they immediately put us in touch with their Culinary Director -- Mario -- who personally saw to it that since they were already sold out of possible replacements, we were issued a prompt refund.
So, the bad news? Our chestnuts were a big disappointment The good news? Frog Hollow stood by the quality of their goods and handled this issue like the champs that they are.
The chestnuts were 1/2 rotted on the inside.
I sent these for a Christmas gift and the couple said they were the most beautiful best tasting chestnuts they ever had
