Braised Cabbage With Apples

Ingredients:

  • 1 large cabbage, cut into thin strips
  • 2 tbsp. of quality olive oil
  • 1 small onion, thinly sliced
  • 2 Pink Lady apples, cored and sliced
  • Sweet white vinegar to taste
  • Allspice to taste (we used 1/2 tsps)
  • Kosher salt and freshly ground black pepper to taste

Method:

  1. Add the sliced cabbage into a large bowl and cover with cold water.
  2. Meanwhile, heat the olive oil in a heavy bottom pan and sweat the onions for 10 minutes, add vinegar and allspice. Add the sliced apples and cook for an additional 4 - 5 minutes.
  3. Drain the cabbage and add to the pot. Toss together and place a lid.
  4. Season to taste and stir from time to time. Cook at low heat for 1 hour.
  5. Adjust seasoning.
  6. Serve.
