Kosher salt and freshly ground black pepper to taste
Method:
Add the sliced cabbage into a large bowl and cover with cold water.
Meanwhile, heat the olive oil in a heavy bottom pan and sweat the onions for 10 minutes, add vinegar and allspice. Add the sliced apples and cook for an additional 4 - 5 minutes.
Drain the cabbage and add to the pot. Toss together and place a lid.
Season to taste and stir from time to time. Cook at low heat for 1 hour.
