Ingredients:
- 1 medium-sized celery root, skin removed and cut into thin batons
- 1 Fuji apple, cut into batons
- 2 stalks of celery, sliced thinly on a bias
- Vest and juice of 1 Meyer lemon to taste
- 2 tbsp. of minced Italian parsley
- Champagne vinegar to taste
- Quality Dijon mustard to taste
- Quality mayonnaise to taste
Method:
- In a medium-sized mixing bowl, place the ingredients and mix well using your clean hands or a rubber spatula-I like using my hands because I can mix the salad without breaking or bruising.
You can make this ahead of time and place it in the refrigerator or serve it at once.
