Celery Root Remoulade with Fuji Apples and Celery

Ingredients:

  • 1 medium-sized celery root, skin removed and cut into thin batons
  • 1 Fuji apple, cut into batons
  • 2 stalks of celery, sliced thinly on a bias
  • Vest and juice of 1 Meyer lemon to taste
  • 2 tbsp. of minced Italian parsley
  • Champagne vinegar to taste
  • Quality Dijon mustard to taste
  • Quality mayonnaise to taste

Method:

  1. In a medium-sized mixing bowl, place the ingredients and mix well using your clean hands or a rubber spatula-I like using my hands because I can mix the salad without breaking or bruising.

You can make this ahead of time and place it in the refrigerator or serve it at once.
