Pink Lady Cake

Ingredients:

Cake:

  • 2/3 cup canola oil
  • 1 1/2 cups light brown sugar
  • 3 eggs
  • 1 tbsp cinnamon
  • 1 tsp kosher salt
  • 2 1/2 cups all-purpose flour
  • 2 tsp baking powder
  • 3 Pink Lady apples (cored, peeled, and finely diced)

Cinnamon and Sugar Topping:

  • 2 tbsp cane sugar
  • 2 tbsp cinnamon

Dressing:

  • 2 tbsp cream cheese (room temperature)
  • 1/3 cup powdered sugar
  • 1 tbsp cinnamon
  • Kosher salt to taste
  • 3 tbsp whole milk

Instructions:

  1. Preheat the oven to 350°F.
  2. Oil a 9-by-13-inch metal pan and line it with parchment paper.
  3. In a large mixing bowl, whisk together the eggs, oil, light brown sugar, cinnamon, and salt.
  4. In a separate bowl, stir the flour, baking powder, and baking soda until well combined.
  5. Mix the dry ingredients into the wet ingredients until just combined.
  6. Fold in the diced apples. The mixture will be very thick, so you may need to use a spoon or your hands to incorporate them.
  7. Spread the mixture into the pan and sprinkle with the cinnamon and sugar topping.
  8. Bake for 35 to 40 minutes, or until a toothpick inserted into the center comes out clean.
  9. Remove from the oven and allow the cake to cool for 30–40 minutes.
  10. Drizzle the cinnamon dressing over the cake and serve immediately.
