Makes about 2 cups
Ingredients:
- 2 medium-sized Gold Dust peaches
- 4 plum tomatoes, cut in half
- 1/4 of a white onion
- 1 serrano pepper (we checked for heat, and 1 serrano was enough)
- 1 clove of garlic in its jacket
- Minced cilantro to taste
- Lime juice to taste
- Kosher salt and freshly ground black pepper
Method:
Preheat the oven to broil.
On a heavy-bottomed sheet pan with parchment paper.
Place the ingredients in a roasting pan and roast until a good amount of char forms.
Remove from the oven and allow it to cool for 30 minutes.
Place the roasted ingredients into a blender.
Make sure you place a towel over the lid and hold with a good amount of pressure.
Hot ingredients create pressure and pop the lid open.
Add lime juice and season to taste.
