Succotash with Stonefruit

Ingredients:

  • 2 Nectarines or Peaches, pit removed and diced
  • 3 Yellow corn, shucked and kernels removed
  • ½ red onion, diced
  • 3 cloves of garlic, sliced thin
  • 1 poblano pepper, stem, seeds, and pith removed, and diced
  • 1 serrano pepper, stem removed and minced
  • Minced basil to taste
  • Minced parsley to taste
  • Kosher salt and freshly ground black pepper to taste
  • 2 tbsp. of butter or ghee

Method:

  1. Heat a sauté pan over medium-high heat. Add butter, onions, garlic, and serrano pepper, then season to taste.
  2. Sauté for 10-15 minutes, until the edges of the vegetables begin to brown.
  3. Add the corn kernels and sauté for an additional 5-10 minutes.
  4. Remove from heat, then add the herbs and the diced stone fruit.
  5. Season to taste.
  6. Serve at once.
