Ingredients
Makes 2 salads
4 Apricots, cut into quarters
2 Endives, leaves kept whole
Shavings of Manchego cheese to taste
4 Slabs of dried O’ Henry peaches, sliced into quarters
Chive blossoms to taste
Kosher salt and freshly ground black pepper to taste
2 tbsp. of buttermilk
Olive oil and vinegar to taste
Method
Place the ingredients into a bowl to your liking. Dress and season to taste. Serve at once.
