- Extra virgin olive oil to taste
- Lemon juice to taste
- kosher salt and freshly ground black pepper to taste
- 3 ounces of baby spinach
- ¼ cup pine almonds, shaved using a chef’s knife
- 4 ounces of blueberries
- 6 ounces Halloumi cheese, pan-fried and browned
On a large serving platter, place ingredients to your liking.
Dress and season to taste. Serve at once.
