French Fingerling Potatoes with Meyer Lemon Olive Oil

Ingredients:

6 medium-sized fingerling potatoes, blanched in salted water and skin removed

Meyer Lemon Olive Oil

Kosher salt and freshly ground black pepper to taste

 

Method:

Slice the blanched and peeled fingerling potatoes in thin slices.

Place the potatoes on a serving platter. Season and dress to taste.
