Celery & Fennel Salad with Asian Pears, Manchego Cheese, and Roasted Pumpkin Seeds
1/1/2 cup of thinly sliced celery
1 cup of thinly sliced fennel
1 Asian pear thinly sliced
Roasted pumpkin to taste
Manchego cheese to taste
Few leaves of Italian parsley
Lemon juice and zest to taste
Olive oil to taste
Kosher salt and freshly ground black pepper to taste
On a large serving platter, place the ingredients to your liking.
Season and dress to taste. Serve at once.
