Summer Salad of Zee Lady Peaches, Tomatoes, Cucumbers, and Whipped Goat Cheese

Ingredients:

  • 1 large Zee Lady peach, pit removed and cut into bite-sized pieces
  • 4-5 small Early Girl tomatoes, cut into bite-sized pieces
  • 2 Persian cucumbers, cut into bite-sized pieces
  • 1/4 of a red onion, sliced thin and macerated in vinegar
  • Basil leaves for garnish
  • 4 ounces of goat cheese
  • 1/4 cup of heavy cream
  • Olive oil to taste
  • Lemon juice to taste
  • 1/2 tbsp. of quality Dijon mustard

Method:

  1. In a food processor or blender, add goat cheese and cream. Blend until well incorporated.
  2. In a small mixing bowl, add mustard, lemon juice, and olive oil. Season to taste, mix well, and set aside.
  3. Spoon the goat cheese mixture onto a serving platter and spread as desired.
  4. Add the peaches, tomatoes, and cucumbers, then garnish with basil leaves.
  5. Season to taste and drizzle with the dressing.
