Ingredients:
- 1 large Zee Lady peach, pit removed and cut into bite-sized pieces
- 4-5 small Early Girl tomatoes, cut into bite-sized pieces
- 2 Persian cucumbers, cut into bite-sized pieces
- 1/4 of a red onion, sliced thin and macerated in vinegar
- Basil leaves for garnish
- 4 ounces of goat cheese
- 1/4 cup of heavy cream
- Olive oil to taste
- Lemon juice to taste
- 1/2 tbsp. of quality Dijon mustard
Method:
- In a food processor or blender, add goat cheese and cream. Blend until well incorporated.
- In a small mixing bowl, add mustard, lemon juice, and olive oil. Season to taste, mix well, and set aside.
- Spoon the goat cheese mixture onto a serving platter and spread as desired.
- Add the peaches, tomatoes, and cucumbers, then garnish with basil leaves.
- Season to taste and drizzle with the dressing.
