Chilled salads are an easy and delicious way to beat the end-of-summer heat.
You can easily add protein or keep it vegan-friendly.
Chilled Noodle Salad with Hosui Pears
Makes 3-4 servings
Ingredients:
- Half of a package of the thin rice noodles, blanched in seasoned water until done, washed and chilled for two hours
- 2 Hosui pears, stem removed and sliced thin
- 1 serrano pepper, thinly sliced
- 4 stems of green onions, sliced thin

Cilantro to taste
- 1/2 cup of pan-fried cashews
- Finely minced ginger to taste - 1 teaspoon-ish
- Roasted black sesame seeds to taste
- Coco amino to taste
- Rice wine vinegar to taste
- Kosher salt and freshly ground black pepper to taste
Method:
- On a large serving platter, place the ingredients to your liking.
- Season and dress to taste.
- Serve at once.
