Chilled Noodle Salad with Hosui Pears

Chilled salads are an easy and delicious way to beat the end-of-summer heat. 
You can easily add protein or keep it vegan-friendly.

Chilled Noodle Salad with Hosui Pears

Makes 3-4 servings

Ingredients:

  • Half of a package of the thin rice noodles, blanched in seasoned water until done, washed and chilled for two hours
  • 2 Hosui pears, stem removed and sliced thin
  • 1 serrano pepper, thinly sliced
  • 4 stems of green onions, sliced thin
  • Cilantro to taste
  • 1/2 cup of pan-fried cashews
  • Finely minced ginger to taste - 1 teaspoon-ish
  • Roasted black sesame seeds to taste
  • Coco amino to taste
  • Rice wine vinegar to taste
  • Kosher salt and freshly ground black pepper to taste

Method:

  1. On a large serving platter, place the ingredients to your liking.
  2. Season and dress to taste.
  3. Serve at once.
