Baked Feta Cheese with Persimmons and Red Onions
Ingredients:

5 Fuyu persimmons, with calyx and skin removed and cut into quarters

1 large red onion, skin removed and cut into 8 pieces

8 ounces of Greek feta

Honey to taste

A few sprigs of thyme

Olive oil to taste

Pomegranate molasses to taste

Kosher and freshly ground black pepper to taste

Method:

Turn the oven to 425 degrees.

In a large mixing bowl, place the sliced persimmons and red onion and season and dress to taste.

On a heavy-grade sheet pan, place a sheet of parchment paper.

Place the piece of feta onto the middle of the sheet pan, spoon some honey over the feta, and surround it with the persimmons and red onions.

Bake inside the oven for 20 minutes.

Turn the broiler on and cook until the top of the feta cheese is nicely browned.

Remove from the oven drizzle with some pomegranate molasses and serve at once.
