Bruschetta Two Ways

#1 Dry Farmed Tomato Bruschetta

Method

In a medium-sized mixing bowl. Rub the clove of garlic against the sides of the inner bowl and set aside

Chop the tomatoes into small cubes and place the tomatoes inside the garlic seasoned bowl. Roll the basil leaves up and thinly slice crosswise, add the basil strips into the bowl, dress, and season the mixture to taste. Carefully mix the tomatoes using a rubber spatula.

Rub the grilled bread with the garlic clove and season with kosher salt and freshly ground black pepper and dress with olive oil. Spoon over toasted bread.


#2 Dry Farmed Tomato and Peach Bruschetta

Ingredients

  • ½ pound dry farmed early girl tomatoes (3-4), cut into small cubes
  • 1 medium sized peach, with the pit removed and cut into small cubes
  • Kosher salt to taste
  • Quality olive oil to taste
  • 1 garlic clove
  • 6 basil leaves
  • Grilled or toasted crusty bread, for serving

Method

Roll the basil leaves up and thinly slice crosswise, add the basil strips into the bowl, use a rubber spatula mix well. Dress and season it to taste.

Rub the grilled bread with the garlic clove and season with kosher salt and freshly ground black pepper and dress with olive oil. Spoon over toasted bread
