Not to be eaten raw, Japanese Ume Plums are green, sour, and very astringent. However once pickled, fermented, or cooked into a syrup they are very delicious. Fresh Ume plums are only available during a short window during spring. Try cooking them into a syrup or preserving them to make the traditional Japanese umeboshi.

Made two great batches of ume syrup!

The plums made delicious ume syrup that I have both kept on it's own and used in a shrub.

My only minor issue was that the plums were at different stages of ripeness. I didn't process them for a few days after they arrived, and several had to be discarded and one was much farther along (lacking the green color and more appropriate for pickling than syrup as far as I understand). I hadn't noticed this when I checked on them day to day, only looking at a few.

Nonetheless, I had plenty for what I wanted to do and hope to buy again next year.
