Organic Green Almonds

Green almonds are tart, crunchy, and juicy. This seasonal specialty has a very brief window for harvest. Surprisingly versatile, they are best enjoyed thinly sliced. We love them drizzled with olive oil and a sprinkling of Stardust Dipping Powder or salt. Toss them into salads for zing or pair with any quality artisan cheese. For the adventurous, try pickling them whole. Be sure to grab some before they are a fleeting memory of early spring.

    What Are They? Did you know almonds aren’t botanically considered nuts? They’re stone fruit! Walk up to an almond tree in the springtime and see fuzzy little fruit on the branch—like a little green peach. Deep inside the flesh and pit is what we call the almond. Turns out, when these fruits are young, you can eat them! They're a highly coveted treat among gourmet chefs. 
    Nutritional Value: Almonds are an excellent source of magnesium, vitamin E, calcium, riboflavin, phosphorus, copper, and dietary fiber. They are cholesterol- and sodium-free.
    How to enjoy: Green almonds only require gentle washing and the removal of any clinging stems before you eat them. They can be sliced fresh or pickled whole. You may eat the wonderfully tart green husk or you may remove it and simply enjoy the green almond inside. Excellent raw, green almonds are also delicious roasted in their shells. Place nuts in single layer on an ungreased baking sheet, bake at 250 degrees for about ten minutes. Remove from oven, score seam of shell with knife to separate, and remove nut.
    Serving Suggestions: We recommend pairing green almonds with some type of high quality fat to balance their tart flavor.
