- 4 Sweet potatoes, cut into 1-inch cubes blanched in salted water until al dente
- Splash of olive oil
- 1 cup pomegranate arils
- 1/3 cup of sunflower seeds
- 1/2 cup pepitas
- 1/2 cup feta cheese
- 2 tablespoons red wine vinegar
- 2 tablespoons olive oil
- Kosher salt and freshly ground black pepper to taste
MethodPreheat the oven to 425 degrees. In a large mixing bowl place the blanched sweet potato and dress with a splash of olive oil and season to taste. Mix gently using a rubber spatula. Place the dressed sweet potatoes on a parchment lined sheet pan. Roast for 20-30 minutes, stirring occasionally, or until sweet potatoes are tender and the edges have browned nicely.
Remove from the oven.
On a large serving platter, place the ingredient to your liking. Add pomegranate arils, pepitas, and feta cheese, season and dress to taste. Serve at once.
