Ingredients
- 2 (Pink Lady) Apples, peel, and cut into thin slices
- 3 eggs
- ½ cup flour
- ½ cup whole milk
- 1 tablespoon sugar
- Pinch of cinnamon or nutmeg
- 2 tablespoons unsalted butter
- Confectioner sugar for dusting
Method
Preheat the oven to 400 degrees.
Place butter in a heavy 10-inch oven-safe pan (we used a well-seasoned cast-iron pan) on medium to medium-low heat and add the sliced apples. Cook until both sides of the apples are nice and caramelized (10 -15 minutes). Combine eggs, flour, milk, sugar, and nutmeg in a blender jar and blend until smooth. The batter may also be mixed by hand.
Add the batter into the pan with the caramelized apples. Add the pan into the oven and cook for 20 minutes.
Remove pancake from oven and dust with confectioner sugar. Serve at once.
