Serving Suggestions: 
Cut off the bottom and crown of the pineapple. Stand the pineapple upright. Using a sharp chef's knife remove the spiky skin by either slicing downwards in sections or around as you would peel an apple. Cut into thin full moons so you can enjoy the more fibrous center. 

If you can manage not to eat every last piece out of hand, pineapple brightens every smoothie and spritz and is excellent baked into a torte or cookies. For savory applications, pineapple contains the enzyme bromelain, which breaks down proteins making it a great choice for marinade to tenderize meats while adding flavor.
