Roasted Cauliflower and Carrots with Meyer Lemon Olive Oil

Ingredients:

2 small heads of cauliflower

6 carrots, tops removed

2 kumquats

1 Cara Cara, skin removed and sliced thinly in full moons

1 Ruby Star Grapefruit, skin remove and “supreme” the segments

Meyer lemon juice to taste

Olive oil to taste

Meyer lemon olive oil to finish and to taste

Kosher salt and freshly ground black pepper to taste

Method:

Preheat the oven to 425 degrees.

In a large mixing bowl, place the veggies, dress with olive oil and season to taste.

On a heavy-duty sheet pan, place the veggies and roast for 20 to 25 minutes.

Remove the vegetables from the oven and allow it to cool for a few minutes.

On a large serving platter place the ingredients to your liking. Finish with Meyer Lemon Olive Oil, Meyer lemon juice and season to taste.
