Check beans for debris, and rinse thoroughly. In a large pot, sauté aromatic vegetables (onions, garlic, celery, carrot, etc.) in olive oil. Add beans and enough water to cover by about 2 inches. Bring to a full boil for 10 to 15 minutes. Reduce heat to a gentle simmer, using a lid to help regulate the heat, and gently cook until done, 1 to 3 hours. Salt when the beans start to soften. A pre-soak of 2 to 6 hours will lessen the cooking time.

If you grew up thinking you hated Limas, you owe it to yourself to give this one a try. This is one of those beans that would be great with tons of garlic and sautéed wild mushrooms! A true Lima bean, originally from Peru (hence Lima), this gorgeous bean has all the "meat" of Limas, but with a chestnut texture. They're big and bold and can stand up to a chile sauce or curry or simply be enjoyed with a drizzle of olive oil and a few grates of dry goat cheese. One of Steve Sando's most successful inventions was cooked Christmas Limas in a gorgonzola sauce. H still swoons a little when he thinks about this dish! Suggestions: Pot beans, salads, soups, casseroles, chili, curry Christmas Limas are an intriguing variation on the traditional Lima. In Italy, you'll find them as Fagioli del Papa or "Pope's beans." Also known stateside as "Chestnut Lima" and sometimes even "Calico" beans. Whatever you call them, they've done a great deal to help fix the bad reputation of traditional Lima beans.
