These aren’t your typical store-bought treats. Our ice cream sandwiches are crafted in our Farm Kitchen using organic fruit from our regenerative orchard and made entirely by hand. From Farm Dinner to Freezer: The Origin Story
The inspiration for our ice cream sandwiches began with a convivial olive dinner here on the farm to celebrate the olive harvest and our fresh pressed oil. Chef Becky wanted a dessert guests could easily enjoy by hand, so she created a pear caramel ice cream nestled between two lightly spiced ginger cookies. And just like that, the seed was planted!
The idea stuck, and Becky and our team began refining the concept for markets and online orders. While graham crackers were initially tested, they overpowered the fruit. The ginger cookies, too, were a bit too bold. Eventually, Becky landed on a house-made rectangular cookie: gently sweet, tender, and designed to let our farm’s fruit shine. For the cherry ice cream sandwich, a dark chocolate wafer was developed that adds richness without overwhelming the flavor.

Inside the Farm Kitchen with Chef Becky
The process of making each ice cream sandwich is nothing short of an art. Each batch is made in small quantities by a single team member over several days:
- Day 1: The ice cream base is churned, then poured into sheet pans to chill. Our handmade cookies are baked in the oven and chilled.
- Day 2: Ice cream is carefully, by hand, sandwiched between the cooled cookies then cut and meticulously smoothed out. The finished sandwiches are then placed into the freezer to fully firm up.
- Day 3: Each sandwich is hand-wrapped, labeled, and frozen until it’s ready for you to enjoy.
This process is time-consuming, but that’s exactly what makes it special. Every step is done by hand: the cookies, the ice cream, the wrapping. Nothing is mass-produced, and every bite reflects the care and creativity of our small kitchen team. It’s a slow, hands-on process that ensures that every bite is as beautiful and delicious as the orchard it came from.
