Osso Buco is Italian for "bone with a hole" (osso "bone", buco "hole"), a reference to the marrow hole in the center of a cross-cut beef shank. Our 100% grass-fed and grass-finished beef shank is a cheaper cut of beef, although it's very flavorful and tender when braised.

Their free range, predominantly Angus cattle are raised organically, are 100% grass-fed and grass-finished, and never receive artificial hormones, growth promotants, or antibiotics. Stemple Creek’s Berkshire pigs are humanely raised in large outdoor pens on a diet of organic, non-gmo grains and wild forage. The regenerative, organic agricultural practices employed at the farm support the long-term health and productivity of the soil and help preserve sensitive wildlife habitat and restore natural watershed areas.
