Spinach Salad with Cheese, Blueberries and Shaved Almonds


  • Extra virgin olive oil to taste
  • Lemon juice to taste
  • kosher salt and freshly ground black pepper to taste
  • 3 ounces of baby spinach
  • ¼ cup pine almonds, shaved using a chef’s knife
  • 4 ounces of blueberries
  • 6 ounces Halloumi cheese, pan-fried and browned


On a large serving platter, place ingredients to your liking.
Dress and season to taste. Serve at once.
