- 4 Pink Lady apples
- 2 tsp cinnamon
- 3 Tbsp sugar
- 3 cups flour
- 3 tsp baking powder
- 2 cups sugar
- ½ tsp kosher salt
- 3 tsp vanilla extract
- 1 cup canola
- 4 eggs large
- 5 Tbsp Meyer lemon juice
Method:Preheat the oven to 325° and spray the pan with oil and flour and set it aside.
Core and slice the apples. Mix the apple slices with cinnamon and sugar in a mixing bowl and set aside.
With a spoon combine flour, oil, salt, vanilla, sugar, eggs, baking powder, and Meyer lemon juice in a second mixing bowl. The batter will be very thick.
Spoon 1/2 of the batter into the pan then 1/2 of the apple mixture. Repeat the mixture one more time.
Bake for 90 minutes or until a toothpick inserted into the center comes out clean.
Rest the cake for 15 minutes and remove it from the pan.
