Citrus and Olio Nuovo Vinaigrette

Ingredients

  • 2 tbsp. of orange juice
  • 2 tbsp. of Meyer lemon juice
  • 4 tbs. Olio Nuovo
  • Kosher and black pepper to taste
  • ½ of minced shallot, macerated in the citrus juice for twenty minutes

Method

Allow the minced shallots to macerate in the citrus juice for twenty minutes.

Place the ingredients into a blender and blend for 15 to 20 seconds.

Taste for acid balance and seasoning. Serve at once.
