Charred Apricots with Honeyed Mascarpone and Amaretti Cookies



  • ¼ cup of organic sugar
  • 2 apricots halved, and the pit removed
  • ¼ Cup of mascarpone cheese, (we used Vermont Creamery) brought to room temperature
  • Local honey to taste (we used Miss Bee Haven)
  • 2 Frog Hollow Amaretti cookies


Light grill to medium-high heat and preheat for at least 10 minutes. In a small bowl, stir the mascarpone with the honey to taste. On a medium sized flat plate, spread the sugar flat as possible and push the cut side down on to the sugar. Allow the excess to fall off back on to the plate.

Using the longest pair of tongs you own (due to the heat) and place the sugar coated apricots on the grill. Grill the halved apricots 3-4 minutes and don't be afraid to blacken them.

Transfer the grilled fruit to plates and add a dollop of the honeyed mascarpone and place the two Amaretti cookies. Serve at once.
