This is a simple Spring recipe inspired by a dish that Farmer Kristin ate while spending time in Northern Italy. It's a perfect for an afternoon snack.

Shaved Apple and Fennel Salad with Frisee and Swiss

Serves 2

INGREDIENTS:

1 apple, shaved or sliced thinly

½ a fennel bulb, shaved or sliced thinly

1 ½ cups of frisee or other bitter green

1 oz Swiss cheese, cut into small cubes

Salt to taste

Drizzle of olive oil

METHOD:

Layer the shaved apple on the serving plate. Scatter the shaved fennel on top of the apple. Bunch the greens together and place them in the center of the plate on top of the apple and the fennel. Sprinkle the cubed cheese over all of the ingredients. Lastly, add a pinch of salt and drizzle the olive oil over the ingredients. Serve with grilled bread, and sparkling water or white wine.
